Now this recipe is just and extension of my Restaurant style chana masala recipe, but in this recipe also I have done a lot of research to give the best outcome I realised that many times just a few push just a few tips change the total outlook of the recipe I hope you like this recipe as well (‘’,) …

 

INGREDIENTS TO MAKE FIRM BHATTURE (Rest for min. 2 Hrs):

 

1 Cup / 150 gms All Purpose Flour / Maida

¼ Cup / 75 gms Curd (Room Temp)

¼ Cup / 40 Gms Water

1 tsp Sugar

½ tsp Salt

½ tsp Baking Powder

¼ tsp Baking Soda

1 Tbsp Semolina / Suji

1.5 Tbsp Ghee / Clarified Butter or Vanaspati Ghee/ Hydrogenated Oil

6 gms / 2 tsp Milk powder

 

 

INGREDIENTS TO MAKE SOFT BHATTURE (Rest for min. 1Hr):

 

1 Cup / 150 gms All Purpose Flour / Maida

¼ Cup / 75 gms Curd (Room Temp)

¼ Cup / 40 Gms Water

1 tsp Sugar

½ tsp Salt

½ tsp Baking Powder

¼ tsp Baking Soda

1 tsp Semolina / Suji

1.5 Tbsp Ghee / Clarified Butter or Vanaspati Ghee/ Hydrogenated Oil

12 gms / 4 tsp Milk powder

 

INSTRUCTIONS TO MAKE THE RECIPE :

 

 

KEY POINTS:

  • You need to knead the dough properly for 10 – 15 minutes.
  • Cover the dough with a Damp cloth and let it rest in a warm place, I let it rest in my Microwave Oven.
  • Make sure that your dough balls are smooth and well oiled while you are rolling them other wise they might stick with the rolling board.
  • Make sure the is Super hot i.e. just about to smoke other wise the bhaturas will not puff up properly and absorb a lot of oil.
