Malai Kofta
Now you guys have been asking me for the malai kofta recipe since my cream chicken recipe, I have got 3 versions of malai kofta restaurant style in my bag in this video I made the kofta with paneer and aloo which is the basic version in that add a lot of poha and cornstarch to bind and keep things together… I hope you like this video
INGREDIENTS TO MAKE THE KOFTAS :
1/2 Cup Poha/ Beaten Rice (Refreshed with some water)
1 Mid – Size Boiled Potato
150 gms Paneer
Few Chopped Cashews (For Stuffing)
Few Chopped Raisins (For Stuffing)
3 Green Cardamoms Coarsely Crushed
2 Tbsp Corn Starch
1 Tsp Salt (or as per Taste)
1/2 tsp Black Pepper (or as per Taste)
1/4th Desiccated Coconut
1/4th Cup Corn Starch (for coating the kofta balls)
INGREDIENTS TO MAKE THE WHITE GRAVY:
15 – 20 Cashews Paste
3 – 4 Green Chillies
1 Inch Ginger (Cut into juliennes)
*WHOLE SPICE MIX
3 – 4 Mid-Size Onion Puree
2 Tbsp Oil
1 Tbsp Butter
80 – 100 Gms Khoa/ khoya / Mawa
2 tsp Ginger Garlic Paste
½ Cup Water (added while making gravy)
1 Cup Water (added in the end)
1 tsp Kasturi Meethi
2 Tbsp Fresh Cream
1/4 tsp Black Pepper
1/2 – 1 tsp salt (or as per your taste)
1 tsp Sugar
*WHOLE SPICE MIX COMBINATION
1 Badi Elachi / Black Cardamom
1 Dal Chini / Cinnamon Stick
3 Green Cardamom / Choti Elachi
4 Laung / Cloves
POINTS TO REMEMBER:
- Make sure to fry less kofta together\
- Do Not use a lot of oil while frying cause the the whole oil goes to waste due to cornstarch
- Let the koftas rest for few moments after coating them with cornstarch
- Keep a cloth at the time of grinding the boiled onion paste
- Add a lot of water to the gravy before adding kofta as they will absorb the gravy
