MCDONALD’S FILET-O-FISH

Filet O Fish has been a part of McDonald’s menu from a long time and apparently now they don’t serve the same sandwich as it was discovered as evolution has it… the recipe has evolved quite a lot over a period time through feedbacks and what not…. Well still the iconic sandwich still has those basic elements like a fish patty a hamburger bun (steamed) and an American cheese slice.My story with this sandwich has been a long term connection not only in grad school it has been my part since as I was a teen and now I’m well over the drinking age limit (yay) any ways, since after my post on iconic burger clone and what not this burger an integral part to that list and to tell you the truth to decode this recipe was actually not very difficult few elements were quite common and generic well I guess it’s up to you to decide so here is the recipe  Enjoy…

 

LIST OF INGREDIENTS:

700 – 800 Gms Firm Flesh Fish

Ham Burger Buns (You can use any other bun of your choice also)

4 – 5 American cheese Slices/ Cheddar Cheese Slices

Some Panko Breadcrumbs

¼ Cup All Purpose Flour + 1 Tbsp.

1/8-Cup Corn Starch

1 Tbsp. Corn Meal

¼ tsp. Turmeric Powder

¼ tsp. Cayenne Pepper

1/8 tsp. Black Pepper

½ – ¾ tsp. Salt

½ Cup Ice Cold Water

2 – 3 Drops Paprika Oleoresin/Paprika Extract

 

Note: You can replace paprika extract with 1/4 tsp. paprika powder

 

For Brining Fish:

2 Cups Water

1 Tbsp. Salt

 

 INSTRUCTIONS TO MAKE THE RECIPE:

 

 

KEY POINTS:

  • Make sure you keep the fish in salted water for at least 1 hour for have a more balanced taste.
  • Make sure you pat dry the fish before you use it
  • It is very important to dredge the fish in some all-purpose flour such that the batter can stick properly to the fish.
  • After assembling the sandwich you need to cover the sandwich with a wax paper/butter paper and bake @ 200C or 390F for 1.5 minutes this will make the buns steamed and help the cheese to melt and stick with the bun.

  • Haddock
  • Pollock
  • Basa
  • Shad
  • Scamp

 

Alternatives of Cayenne Pepper (In order of preference)

. Yellow chilly powder

. Capsicum powder

. Red Chilly Powder
