VEGETABLE CHEESE SHOTS

When I posted my chicken and cheese shots recipe a lot of subscribers asked me what is the vegetable version of this so I had to post a veg version as soon as possible so here it is , it is easy and it is simple (‘’,)
INGREDIENTS:
3 Boiled Potatoes
10 tsp Soya Granules
*Spice Mix
**Batter
Tortilla Chips / Nachos (Optional)
Mozzarella Cheese (Grated)
Italian Seasoning
½ – 3/4 tsp Salt (or as per taste)
1 Carrot Finely Chopped
¼ Cup Rice Flakes
NOTE: Instead of rice flakes you can use ¼ Cup Rice Flour as well
*INGREDIENTS FOR SPICE MIX:
¾ tsp Coriander / Dhaniya Powder
1 tsp Red Chili / Lal Mirch Powder
1.5 tsp Cumin / Jeera Powder
¼ tsp Turmeric / Haldi Powder
½ tsp Garlic Powder or ½ tsp Chopped Garlic
½ Onion Powder (optional)
¼ tsp Black Pepper / Kali Mirch
**INGREDIENTS FOR BATTER :
½ Cup All Purpose Flour ( Maida)
¼ Cup Corn Starch or Corn Flour
½ tsp Salt
1 Tbsp Corn Meal / Makki Ka Atta (Optional)
¼ Cup + 1 Tbsp Ice Cold Water
INSTRUCTIONS TO MAKE THE RECIPE:
ADDITIONAL VEGETABLES YOU CAN ADD:
- Sweet corns
- Capsicum / Bell Pepper
- Spinach
- French Beans
KEY POINTS:
- Make sure to use cooled boiled potatoes
- Add Salt after adding potatoes to the Pan
- Let the vegetable mix cool down in the freezer
- The cheese should be at room temperature while stuffing

Can we use ground soya chunks instead of soya granules
