Well my journey for yeast free pizza is very long… there are many kinds of pizzas and the fact is that people are quite varied on their choice of pizza but I personally believe that 99% population of the world are in love with pizza, now I don’t mean to become off topic yeast free pizza can be made rely quick but the main issue an instant pizza suffer is the bad smelling components of baking powder such as “sodium aluminum sulfate”, “mono calcium phosphate” they basically are the element that starts the reaction of soda bi carbonate so as baking powder is essential in the recipe to neutralize the smell and have a more balanced taste in the base I increased the amount of baking soda and added sugar…. And curd being a mildly acidic agent will help in the baking soda reaction…
So here is the recipe
INGREDIENTS FOR THE DOUGH
Recipe For 3 Pizza Base
2 Cups All Purpose Flour (Maida)
1 tsp. Baking Soda
½ tsp. Baking Powder
1 + 1/8th Cup Yogurt (strained)
1 tsp. Salt
2 tsp. Sugar
4 Tbsp. Olive Oil / Canola Oil / Refined Soybean Oil
1 Tbsp. Gluten Powder (Optional)
INGREDIENTS FOR ASSEMBLING PIZZA
For 1 Pizza Base
3 Tbsp. Pizza Sauce/ Marinara Sauce
1 tsp. Oregano Seasoning
Some Mozzarella Cheese/Provolone Cheese
Some Oil For Brushing
Toppings Of Your Choice
COMBINATION OF CORN MEAL (MAKKI KA ATTA) AND SEMOLINA (SUJI)
1-Cup Corn Meal
1 Tbsp. Fine Semolina (Don’t add lots of semolina)
INSTRUCTIONS TO MAKE THE RECIPE:
KEY POINTS:
- Give your dough a proper resting time to so that the base has good structure.
- Always keep you dough in a well-oiled bowl.
- Knead soft dough but if you are struggling with the stickiness of the dough then you can dust some all-purpose flour.
- If you’re not using a pizza frame then flip the base after first baking and then start to assemble the pizza.
